'Healthy and delicious zucchini fritters recipe. These zucchini fritters are so simple and easy to make. Perfect lunch or dinner for the whole family. Follow me on INSTAGRAM: https://www.instagram.com/imbar_fitness/ Sweet potato fritters: https://youtu.be/ObNuvDLSp4A INGREDIENTS: 2 large or 3 small zucchini 1 large carrot 1 medium onion 3 large eggs 150 gram (5.3 oz) mozzarella cheese, grated 4 tablespoons whole wheat flour A bit of dill, finely chopped 1 teaspoon kosher salt 1/2 teaspoon black pepper, shredded 2-6 tablespoons Olive oil- for frying the fritters Yogurt sauce ingredients: 300 gram (10.5 oz) yogurt 1.5% A bit of dill, finely chopped A bit of Chives, finely chopped 1/4 teaspoon minced garlic A bit of kosher salt INSTRUCTIONS: 1. Peel and grate the zucchini, carrot and onion. Squeeze out the liquid from the zucchini, carrot and onion with your hands. 2. Place in a small bowl the eggs and beat. 3. Add to a large bowl the squeezed zucchini, onion, carrot, flour, eggs, grated mozzarella cheese, chopped dill, salt and black pepper. Mix until well combined. 4. Heat olive oil (1-2 tablespoon each time) in a large pan over medium heat. Once the oil is hot, use a tablespoon to scoop out fritter batter, carefully form into a fritter. Slightly flatten. 5. Fry the fritters 4-5 minutes on each side, or until they\'re lightly golden. 6. Remove the fritters from the pan and place them on a paper towel. 7. Mix the sauce ingredients together in a bowl, until well combined. 8. Serve the fritters hot with the sauce. Enjoy :) Thanks for watching!
